In this recipe, we are looking at a healthy version of French Onion Soup recipe. The basic French Onion Soup recipe normally calls for butter which is higher in saturated fat. This healthy recipe features cutting of fat by using more heart-healthy olive oil. Whole-grain baguette is chosen for the topping to increase the fiber content.

Easy Healthy Recipe: Healthy French Onion Soup Recipe

Serves: 4

Preparation time: 2 hours


  • Medium onions - 10, thinly sliced
  • Olive oil - 1 tbsp
  • Sugar - 1 tsp
  • Salt - 1 tsp
  • Whole-wheat baguette - 4 to 8
  • Port wine or sherry - 1/4 cup
  • Low-sodium vegetable broth - 5 cups
  • Balsamic vinegar - 2 tbsp
  • Gruyere cheese - 2 oz


  1. In a large pan, heat olive oil. Stir in onions. Cover and cook on low heat for about 20 minutes, or until onions turns brown.
  2. Uncover. Add in sugar and salt. Simmer on medium heat for another 20 minutes, or until onions turn brown. Stir occasionally.
  3. Add in wine and continue cook until the mixture slightly thickened.
  4. Add broth and vinegar. Stir and bring to boil. Then reduce heat and simmer, partially covered, for about 40 minutes.
  5. Preheat oven to 450 degree F. While waiting for the soup to cook, toast baguette slices over cookie sheet in oven for about 10 minutes for each side. Remove from oven and set aside when done.
  6. Pour soup into 4 ovenproof bowls. Top with baguette and sprinkle with cheese.
  7. Put the soup under broiler for about 3 minutes for the cheese to melt.
  8. Serve immediately.
