Easy Healthy Recipe #1: Chicken Fried Rice

Ingredients:

  • Large chicken breasts - 3
  • Brown rice - 2 cups
  • Bean sprouts - 1/2 cup
  • Eggs - 2
  • Olive oil - 2 tbsp
  • Mushrooms - 1/2 cup, chopped
  • Spring onions - 2, chopped
  • Low-sodium soy sauce - 3 tbsp
  • Salt and pepper to taste

Directions:

  1. Boil chicken breast in a pot of boiled water until they are cooked thoroughly.
  2. Slice the cooked chicken breast into small pieces.
  3. Cook brown rice according to package instructions. Once cooked, place the rice in a bowl and set aside.
  4. While cooking rice, in a small pan, cook and crumble the egg while until small pieces. Dish out and set aside.
  5. In a work (or pan), heat oil over medium-high heat.
  6. Add chopped mushrooms and spring onions. Cook until tender.
  7. Add in cooked chicken breast pieces, rice, and crumbled egg. Keep stirring so that they won't stick.
  8. Add soy sauce, salt and pepper to taste. Mix thoroughly and cook for about 5 minutes.
  9. Stir in bean sprouts and they should not stay in heat or long.
  10. Dish out and serve hot.

Easy Healthy Recipe #2: Shrimp (Prawn) Fried Rice

Ingredients:

  • Olive oil - 3 tbsp
  • Shrimp - 10 oz, peeled and deveined
  • Fresh broccoli - 1 cup, chopped
  • Egg whites - 2
  • Brown rice - 2 cup
  • Low sodium soy sauce - 3 tbsp
  • Salt and pepper to taste

Directions:

  1. Cook brown rice according to package instructions. Once cooked, place the rice in a bowl and set aside.
  2. Heat 1 tbsp olive oil in a saucepan over medium-high heat.
  3. Add in shrimp and saute until it started to turns pinky-white, but not cooked completely. Take the shrimp out and place it on a plate.
  4. In the same pan, add broccoli and saute until slightly soft. Remove broccoli from heat and place it on the plate with the shrimp.
  5. Next, add another 1 tbsp olive oil and let it heat for a while. Pour in egg whites and cook until they are done.
  6. Pour in the remaining olive oil. Add in cooked rice, shrimp and broccoli to the egg. Keep stirring so that the rice won't stick.
  7. Add soy sauce, salt and pepper to taste. Mix thoroughly and cook for about 5 minutes.
  8. Dish out and serve hot.

Easy Healthy Recipe #3: Pork Fried Rice

Ingredients:

  • Cold cooked rice - 2 cups
  • Eggs - 2, lightly beaten
  • Olive oil - 2 tbsp
  • Medium onion - 1, chopped
  • Roast pork - 1 cup, diced
  • Shredded napa cabbage - 1/2 cup
  • Dark soy sauce - 2 tbsp
  • Salt and pepper to taste

Directions:

  1. Heat 1 tbsp olive oil in a wok (or pan) over medium-high heat.
  2. Pour in egg and cook until they are done. Remove from heat and cut the egg into thin strips. Set aside.
  3. In the same wok, heat the remaining olive oil.
  4. Add in chopped onion and stir-fry briefly.
  5. Then add in roast pork and Napa cabbage. Stir fry until pork is cooked.
  6. Add in rice, follow by dark soy sauce. Keep stirring for about 5 minutes to mix well.
  7. Season with salt and pepper.
  8. Dish out and serve the fried rice with the strips of egg laid on top.

Easy Healthy Recipe #4: Vegetable Fried Rice

Ingredients:

  • Garlic - 3 cloves, minced
  • Olive oil - 3 tbsp
  • Cooked rice - 2 cups
  • Tomato - 1, chopped
  • Large handful spinach, chopped
  • Other vegetables of your choice, chopped
  • Soy sauce - 1/4 cup
  • Salt and pepper to taste
  • Juice from 1/2 lime

Directions:

  1. In a pan, heat olive oil over medium-high heat.
  2. Add in garlic and sauté for about 1 minute.
  3. Add cooked rice and stir to combine.
  4. Add in the vegetables and stirring continuously. Allow vegetables to cook for about 10 minutes.
  5. Season with salt and pepper.
  6. Stir in lime juice just before serving.
  7. Dish out and serve hot.

Ingredients:

  • Cooked rice - 2 cups
  • Eggs - 3, lightly beaten
  • Olive oil - 3 tbsp
  • Garlic - 3 cloves, minced

  • Soy sauce 1/4 cup

  3. In the same saucepan, heat the remaining olive oil over medium-high heat.
  4. Add garlic, spring onions and peas. Stir fry for about 1 minute.
  5. Stir in rice. Keep stirring to avoid rice from sticking.
  6. Add soy sauce, egg and salt. Stir for about 5 minutes to mix thoroughly.
  7. Dish out and serve hot.

Easy Healthy Recipe #6: Beef Fried Rice

Ingredients:

  • Cold cooked rice - 2 cups
  • Olive oil - 2 tbsp
  • Ground beef - 1/2 lb
  • Medium carrot - 1, finely chopped
  • Celery rib - 1, finely chopped
  • Spring onion - 1, chopped
  • Fresh ginger - 1 tsp, minced
  • Garlic - 1 clove, minced
  • Soy sauce - 1 tbsp
  • Sugar - 1/2 tsp
  • Salt and pepper to taste

Directions:

  1. In a pan, heat olive oil over medium heat.
  2. Add in ground beef, carrot, celery and spring onion. Stirring to break up meat. Cook for about 3 minutes or until meat browned.
  3. Stir in ginger and garlic and cook for about 1 minute. Discard excess fat.
  4. Add in rice. Stirring until heated through.
  5. Stir in soy sauce, sugar, salt and pepper to taste. Stir for about 2 minutes to mix thoroughly.

Ingredients:

  • Cold cooked rice - 2 cups
  • Canned pineapple - 8 rings, drained and cut into wedges
  • Olive oil - 2 tbsp
  • Minced garlic - 1 tsp
  • Minced ginger - 1 tsp
  • Onion - 1, chopped
  • Carrot - 1/2, grated
  • Red bell pepper - 1, unseeded and cut into chunked
  • Small cooked shrimp - 1 cup
  • Spring onion - 1, chopped
  • Light soy sauce - 2 tbsp
  • Curry powder - 1 tsp
  • Sugar to taste

Directions:

  1. In a pan, heat olive oil over medium heat.
  2. Add garlic, ginger. Stir fry for 30 seconds.
  3. Add in spring onion, carrot, red bell pepper, pineapple and shrimp. Stir fry briefly.
  4. Add in rice. Keep stirring for about 2 minutes until it turns slightly shiny.
  5. Stir in spring onion, soy sauce, curry powder and sugar to taste. Mix thoroughly.
  6. Dish out and serve hot.
