Easy Healthy Recipe #1: Crock Pot Chicken and Wild Rice

This healthy crock pot chicken and wild rice recipe is healthy, easy and yummy! Only a few ingredients needed and you can just let your crock pot (or slow cooker) do the work.

Ingredients:

  • Onion - 1, chopped
  • 2Cloves garlic - 2, minced
  • Water - 1 1/2 cups
  • Low sodium condensed cream of chicken soup - 2 (10 oz) can
  • Baby carrots - 1 (9 oz) bag
  • Uncooked wild rice - 1 1/4 cups
  • Boneless, skinless chicken breast halves - 4
  • Extra virgin olive oil – 2 teaspoons

Directions:

  1. In a skillet, heat olive oil over medium heat. Add in onion and garlic. Cook and stir for about 2 minutes.
  2. Stir in water and condensed chicken soup. Bring to boil.
  3. Meanwhile, in a 3-4 quart crock pot (slow cooker), place carrots and wild rice.
  4. Pour the chicken soup mixture into crock pot and stir to combine. Make sure wild rice is submerged in liquid.
  5. Layer the chicken breast halves on top.
  6. Covered, and cook on low for 6 hours, until chicken is cooked and rice tender.

Easy Healthy Recipe #2: Steamed Chicken and Brown Rice

This healthy recipe calls for brown rice which is a good source of fiber, calcium, and B vitamins. Besides that, mixed vegetables are added to allow this recipe to fit into a balanced diet. The meal is cooked using healthy steaming cooking method with no additional fat.

Ingredients:

  • Cooked brown rice - 3/4 cup
  • Cooked breast chicken - 2 oz
  • Low sodium soy sauce - 1 teaspoon
  • Lemon juice - 1 teaspoon
  • Parsley - 1/4 teaspoon
  • Garlic - 1 clove, chopped
  • Parmesan cheese - 1 tablespoon
  • Milled flax seeds 2 teaspoons
  • Raw chopped vegetables (onion, green pepper, spinach, broccoli) - 2 tablespoons

Directions:

  1. In a steamer, steam mixed vegetables in a small amount of water until vegetables are all crisp and tender.
  2. Add in rice, chicken, soy sauce, lemon juice and garlic. Mix them together with the vegetables.
  3. Cook over low heat to warm the mixture.
  4. Transfer the chicken and rice mixture to serving dishes. Sprinkle with cheese and flax seeds to serve.

Easy Healthy Recipe #3: Chicken, Mushroom and Rice

Ingredients:

  • Extra virgin olive oil – 2 tablespoons
  • Skinless, boneless chicken thighs – 1 1/4 pounds
  • Baby bella (cremini) mushrooms – 1 (10oz) package, wiped clean and sliced
  • Celery stalks – 2 (medium), thinly sliced
  • Chopped fresh thyme leaves – 1 teaspoon
  • Low-sodium chicken broth – 1 (14 oz) can
  • Organic brown rice – 1 cup
  • Dry white wine – 1/2 cup
  • Salt and ground black pepper to taste
  • Baby summer squash – 8, halved and steamed

Directions:

  1. In a deep skillet, heat oil over medium heat.
  2. Place chicken thighs into skillet and cook for about 5 minutes. Then turn and cook the other side of chicken for another 5 minutes, to brown both sides of chickens. Transfer chicken to a plate and set aside.
  3. To the same skillet, add in mushrooms, celery, and thyme. Cook and stir until vegetables tender crisp.
  4. Add in chicken broth, wine, and rice. Sprinkle with salt and pepper to taste. Bring the mixture to boil.
  5. Transfer chicken back into the skillet. Reduce heat to low. Cover and cook for about 15 minutes, until liquid runs clear and rice is cooked.
  6. Serve the chicken, mushroom and rice together with steamed squash.

Easy Healthy Recipe #4: Cuban Style Chicken and Yellow Rice

Ingredients:

  • Olive oil – 2 tablespoons
  • Chicken breast halves – 6
  • Water – 3 1/2 cups
  • Garlic clove – 1 (medium), minced
  • Yellow rice – 1 (10 ounce) package
  • Salt and pepper to taste
  • Frozen peas – 1/2 pound
  • Red bell peppers – 2, roasted and chopped

Directions:

  1. In a deep skillet, heat olive oil over medium heat.
  2. Place chicken breast halves into skillet and cook to brown both sides of chickens. Transfer chicken to a plate and keep warm.
  3. To the same skillet, pour in water and add in garlic. Bring to boil. Then add in yellow rice.
  4. Return chicken to skillet. Reduce heat to low. Cover and cook for about 20 minutes, until liquid absorbed and rice is cooked.
  5. Spoon peas and roasted pepper into skillet. Cover and simmer for another 3 minutes.
  6. Transfer the healthy chicken and yellow rice to serving dish.
