Fried rice is a popular component of Asian cuisine. A basic fried rice is prepared by stir-frying steamed rice in a work, together with other ingredients such as eggs, vegetables, and some meat. A basic fried rice is an important source of nutrients for the Asian as it incorporates the nutrients that our body needed when the steam rice is mixed with the other ingredients.

Easy Healthy Recipe #1: Chinese Fried Rice

Chinese style fried rice is usually prepared by using leftover rice. Main ingredients include soy sauce, onions, garlic, vegetables and a small amount of meat, eggs or shrimp.

Ingredients:

  • White rice (preferably long grain, cooked and a day or so old) - 3 cups
  • Small raw shrimp, shelled and deveined (or other meat of your choice) - 8 oz
  • Sesame oil - 3 tbs
  • Frozen peas and carrots mix - 1 cup, thawed
  • Minced garlic - 2 tsp or more
  • Eggs - 2, slightly beaten
  • Soy sauce - 1/2 cup
  • Small onion - 1, chopped

Directions:

  1. In a bowl, toss the shrimp with salt and pepper. Marinate for about 10 minutes.
  2. Heat oil in a wok (or pan) over medium-high heat.
  3. Add in shrimp, followed with peas and carrots mix, chopped onion, and minced garlic. Stir fry till shrimp turns pink and vegetables tender.
  4. Lower the heat to medium-low, add in eggs and crumble the egg while stir frying until small pieces.
  5. Add in rice and stir well with the ingredients.
  6. Add in soy sauce and continue to fry the rice for a couple of minutes until blend well.
  7. Dish out and serve hot.

Easy Healthy Recipe #2: Thai Spicy Curry Fried Rice

Thai cuisine has always be known for being spicy. Same applied to Thai style fried rice, which tastes spicy with onion and curry paste as the main seasoning.

Ingredients:

  • Cold steamed rice - 3 cups
  • Vegetable oil - 3 tbs
  • Large onion - 1, finely chopped
  • Fresh red chili pepper - 1, seeded and sliced
  • Thai red curry paste - 1 1/2 tbs
  • Curry powder - 1 tsp
  • Garlic cloves - 3, crushed
  • Chicken breast - 1, finely diced
  • Shrimp - 1 lb, shelled and de-veined
  • Eggs - 2, lightly beaten
  • Pepper to taste
  • Thai-style fish sauce (for the saltiness), 2 to 3 tbs
  • Chopped spring onion - 3/4 cup
  • Chopped coriander to garnish

Directions:

  1. Heat oil in wok (or pan) over medium-high heat.
  2. Add in chopped onion and sliced chili pepper. Stir fry until soft.
  3. Mix in curry powder. Stir fry until the oil separates from the mixture.
  4. Continue with mixing in  garlic, chicken, and shrimp. Fry until chicken cooked and shrimp turn pink.
  5. Add in rice. Toss until coated with the curry mixture and heated through.
  6. In a smaller pan, pour egg and crumble the egg until small pieces.
  7. Move the egg to add into rice in wok.
  8. Sprinkle fish sauce, follow by pepper and then spring onions. Lightly toss.
  9. Remove the fried rice from heat and dish.
  10. Top servings with chopped coriander. You may serve the curry fried rice along with Thai-style chili sauce.

Easy Healthy Recipe #3: Korean Spicy Kimchi Fried Rice

Korean kimchi (also spelled as gimchi, kimchee, or kim chee) fried rice features the famous chopped kimchi (spicy, fermented vegetable dishes) as the main flavoring ingredient. Rice and kimchi are sautéed together with other ingredients including onions, garlic, spring onions, and preferred choice of meat.

Ingredients:

  • Cold steamed rice - 3 cups
  • Napa cabbage kimchi with juice - 1 cup, chopped into small pieces
  • Kimchi juice - 1/4 cup
  • Minced pork (or other meat of your choice) - 1/2
  • Spring onion - 2, minced
  • Onion - 1/4, minced
  • Clove garlic - 1, chopped
  • Vegetable or olive oil
  • Salt and pepper to taste

Directions:

  1. Heat oil in wok (or pan) over medium-high heat.
  2. Add pork and stir fry until it turns white.
  3. Add in spring onion, garlic, onion, and kimchi. Cook until they are soft.
  4. Add in rice, follow by kimchi juice. Toss until coated.
  5. Season with salt and pepper to taste.
  6. Dish out and serve hot.

Easy Healthy Recipe #4: Japanese Fried Rice

Japanese style fried rice, which also known as Cha-han, features the use of vegetables like peas, Japanese leeks and carrots as ingredients. Sometimes katsuobushi (Japanese dried, fermented, and smoked skipjack tuna) is added for flavor.

Ingredients:

  • Cooked rice - 3 cups
  • Frozen peas - 1 cup, thawed
  • Carrot - 2 tbs, finely grated
  • Eggs - 2, beaten
  • Onion - 1/2 cup, diced
  • Olive oil - 2 tbs
  • Japanese soy sauce - 2 tbs
  • salt and pepper to taste

Directions:

  1. Cook rice according package instructions. After cooked, pour rice into a big bowl and let it cools in a fridge.
  2. In a small pan, scramble the eggs in over medium heat. Once cooked, remove from heat and set aside.
  3. When the rice is cool enough (about room temperature), remove from fridge. Add peas, grated carrot, eggs, and onion into the bowl with rice. Toss all the ingredients together until they mix well.
  4. In a large pan, heat oil over medium-high heat.
  5. Pour the bowl of rice mixture into pan, follow with Japanese soy sauce.
  6. Stir fry until vegetables tender and rice coated.
  7. Add salt and pepper to taste.
  8. Dish out and serve hot.

Easy Healthy Recipe #5: Indonesian and Malaysian Fried Rice

Also known locally as Nasi Goreng, Indonesian or Malaysian style fried rice features the use of sweet soy sauce (kicap manis) for flavoring. This Indonesian or Malaysian fried rice taste slightly sweet and salty.

Ingredients:

  • Cold steamed rice - 3 cups
  • Small onion - 1, chopped
  • Small chile peppers - 2, seeded and minced
  • Coconut oil - 2 tbs
  • Soy sauce - 2 tbs, mixed with Organic brown sugar - 1 tbs
  • Organic ketchup or tomato sauce - 1 tsp
  • Mixture of shredded cabbage, sliced carrots, and chopped broccoli - 1 cup
  • Bunch of spring onion - 1, diagonally sliced
  • Small cucumber - 1, peeled and sliced
  • Salt and pepper to taste

Directions:

  1. Heat oil in a wok (or pan) over medium-high heat.
  2. Add in chopped onions and chilies. Stir fry until tender.
  3. Add in rice, followed by sweetened soy sauce and ketchup. Stir until rice coated.
  4. Add in vegetables mixture and scallions. Stir fry until vegetables are cooked through (about 2 minutes).
  5. Add salt and pepper to taste.
  6. Dish fried rice out and serve together with cucumber slices.
