Easy Healthy Recipe #1: Garlic Shrimp Pasta

Ingredients:

  • Shrimp - 1 lb, peeled and deveined
  • Spaghetti noodles - 1 lb
  • Garlic cloves - 6, minced
  • Butter - 1/4 cup
  • Olive oil - 3 drizzles
  • Italian seasoning
  • Fresh ground pepper
  • Red pepper flakes
  • Salt

Directions:

  1. Boil a cooking pot of salt water. Cook pasta in the boiling water until tender. Drain and set aside.
  2. While the pasta cooks, wash shrimp.
  3. In a skillet, melt butter over medium heat.
  4. Add shrimp into the melted butter, and cook until shrimp becomes a little pink and started to curl.
  5. Stir in garlic and cook for about 5 minutes. Add olive oil. Continue cooking until shrimp is pink and curled.
  6. Add in boiled pasta, pepper and seasoning.
  7. Toss all ingredients around until all is incorporated. Add just enough water while tossing to make sure it is not dry.
  8. Serve hot.

Easy Healthy Recipe #2: Spicy Shrimp Pasta

Ingredients:

  • Fettucini or linguine - 1 lb, cooked
  • Shrimp - 1 lb, peeled and deveined
  • Butter - 3 tbsp
  • Olive oil - 3 tbsp
  • Garlic cloves - 3, minced
  • Ground white pepper - 1/2 tsp
  • Red pepper flakes - 1/2 tsp
  • Cayenne pepper - 1/4 tsp
  • Dried oregano - 1/4 tsp
  • Lemon - 1, get juiced
  • Parmesan cheese - 1/2 cup
  • Parsley - 1/4 cup, minced
  • Italian bread crumbs - 5 tbs
  • Salt to taste

Directions:

  1. In a large skillet, melt butter together with olive oil.
  2. Mix in minced garlic, white pepper, red pepper flakes, cayenne pepper and oregano. Stir well.
  3. Cook for about 3 minutes. Add shrimp and lemon juice, toss over the heat.
  4. Add Parmesan cheese, parsley, and bread crumbs. Toss to coat completely.
  5. Place the skillet under the broiler for about 1 minute until cheese melted. The shrimp should be pink and curled by now.
  6. Pour the shrimp mixture over the cooked pasta. Serve while hot.

Easy Healthy Recipe #3: Creamy Shrimp Pasta

Ingredients:

  • Rotini or farfalle pasta - 12 oz
  • Shrimp - 1 lb, peeled and deveined
  • Baby spinach leaves - 6 oz
  • Butter - 1 tsp
  • Portabello mushroom - 8 oz, sliced
  • Onion - 1, sliced
  • Garlic cloves - 2, minced
  • Chicken broth - 1 cup
  • Dry white wine - 1/4 cup
  • Cream cheese - 6 oz, cubed
  • Nutbeg - 1/4 tsp
  • Parmesan cheese - 1/3 cup
  • Salt and pepper to taste

Directions:

  1. Boil pasta in a pot of salted water until it is tender, then drain and place in a large bowl.
  2. Add in spinach to the pasta and stir. Set aside.
  3. In a second pot of water, heat the water to boil and add in shrimp. Let the shrimp boil in hot water for about 1 minute. Drain the hot water and run cold water over the cooked shrimp. Set aside.
  4. In a skillet, melt the butter. Mix in sliced mushroom and cook over medium-low heat for a few minutes until lightly browned.
  5. Add in onion and cook until meltingly soft. Stir in minced garlic and cook for another 1 minute.
  6. Add in chicken broth and white wine. Turn to medium-high heat, stir and cook for about 5 minutes until slightly thick.
  7. Mix in cream cheese, nutbeg, salt and pepper. Heat till cream cheese melted.

Ingredients:

  • Olive oil - 2 tbsp
  • Onion - 1/2, chopped
  • Thyme - 1/2 tsp
  • Cayenne pepper - 1/2 tsp
  • Black pepper - 1/2 tsp
  • Basil - 1/2 tsp
  • Minced garlic - 1 tbsp
  • Worcestershire sauce - 1 tbsp
  • Tabasco sauce - 1/2 tsp
  • Diced peeled and seeded tomatoes - 2 cups
  • Sugar - 2 tbsp
  • Green onions - 1/2 cup, chopped
  • Chicken stock - 3 cups
  • Vermicelli pasta or linguine - 1 lb
  • Fresh shrimp - 1 lb, peeled and deveined
  • Grated parmesan cheese - 1/2 cup

Directions:

  1. Heat olive oil. Add in chopped onion and saute for about 4 minutes.
  2. Stir in minced garlic, thyme, cayenne pepper, black pepper and basil. Cook at low heat for about 5 minutes.
  3. Add in Worcestershire sauce, Tabasco sauce, tomatoes, sugar, chopped green onions, and chicken stock. Cook for another 40 minutes.
  4. Melt some butter. Add in shrimp and saute until a little pink and started to curl.
  5. Mix in the sauce and cook for another 2 minutes.
  6. Toss in the cooked pasta and grated cheese.

  • Cooked spaghetti - 8 oz
  • Olive oil - 3 tbsp
  • Loosely packed fresh basil leaves - 1 cup
