Easy Health Recipe #1: Italian Sausage Pasta

This is a simple and quick recipe. Mild Italian sausage is cooked with tasty tomato sauce and served with pasta.

Ingredients:

  • Mild Italian sausages – 5 links, cut into pieces
  • Extra-virgin olive oil – 2 tbsp
  • Garlic – 5 cloves, finely chopped
  • Chopped fresh flat-leaf (Italian) parsley – 2 tbsp
  • Crushed tomatoes – 1 can (14.5 ounces), with juice
  • Dry rosemary – 1 tsp
  • Dry white wine – 1/3 cup
  • Sea salt and freshly ground pepper
  • Rigatoni – 1 lb

Directions:

  1. In a saucepan, heat olive oil. Add in garlic and parsley. Gently sauté until the garlic is soft.
  2. Add in tomatoes with juices and rosemary to the pan, follow by a little salt and pepper to taste. Stir and bring the sauce to boil.
  3. Pour in wine. Continue to cook for another 2 minutes, or until the alcohol just started to evaporate. Reduce the heat to medium-low and add in the Italian sausages. Cover and simmer for about 45 minutes to thicken the sauce. Stir occasionally.
  4. While waiting the sauce to cook, boil waster and cook pasta according to the package directions.
  5. Drain the pasta and transfer it into the pan with sauce and sausage. Toss the pasta to coat with sauce. Remove from heat and serve immediately.

Easy Healthy Recipe #2: Peppers and Sausage Pasta

This is a healthy recipe with combination of sweet or hot sausages with yellow, green and red bell peppers. The wonderful colors of pepper in this easy-to-make healthy recipe are so appealing and would just make people want to eat.

Ingredients:

  • Hot or sweet Italian sausage – 1 1/2 lb, cut into 1-inch pieces
  • Extra-virgin olive oil – 2 tbsp
  • Garlic - 3 cloves, minced
  • Green bell pepper – 1, cut into strips
  • Yellow bell pepper - 1, cut into strips
  • Red bell pepper - 1, cut into strips
  • Onion - 1, sliced
  • Crushed tomatoes – 1 can (14.5 ounces), with juice
  • Crumbled dried basil – 1 tsp
  • Crumbled dried oregano – 1 tsp
  • Salt and pepper
  • Penne pasta – 1 lb, freshly cooked
  • Grated Parmesan

Directions:

  1. In a saucepan, heat the olive oil. Add garlic and sauté for about 1 minute until garlic golden.
  2. Add in sausages into garlic. Sauté and cook for another 5 minutes until sausages browned.
  3. Next stir in peppers and onion. Cook for another 5 minutes until the vegetables tender. Stir occasionally to mix with sausages.
  4. Mix in tomatoes with juices, basil and oregano. Then season with salt and pepper to taste. Stir, cover and simmer for about 10 minutes.
  5. When done, pour the sauce over cooked pasta and toss.
  6. Sprinkle each serving with Parmesan, and serve.

Easy Healthy Recipe #3: Broccoli and Chicken Sausage Pasta

This is a well-rounded recipe with the protein, carbohydrate and vegetable all encompassed in a meal. What’s more? The healthy and special sauce for the pasta is the water that the broccoli cooks in!

Ingredients:

  • Rigatoni – 1 lb
  • Extra-virgin olive oil – 2 tbsp
  • Onion - 1, sliced
  • Chicken sausage links – 1 lb, cut into 1-inch pieces
  • Broccoli – 1 head (small), cut into florets and stems sliced
  • Water – 1 1/4 cup
  • Grated Parmesan

Directions:

  1. Boil water and cook pasta according to the package directions.
  2. In a saucepan, heat olive oil over medium-high heat. Stir in onion and cook for about 3 minutes until tender.
  3. Add in chicken sausage. Cook and stir for about 3 minutes until sausage browned.
  4. Add in broccoli and water. Cover and simmer for about 5 minutes, until broccoli tender, and sauce thickened.
  5. Pour the sauce over cooked pasta and toss.
  6. Top serving with Parmesan. Serve.

Pasta with sausages, and, chilies! You will enjoy the hot sensation if you enjoy spicy foods. You can always adjust the amount of chilies to be used in the recipe.

Ingredients:

  • Tagliatelle – 1 lb
  • Extra-virgin olive oil – 2 tbsp
  • Onion - 1, finely sliced
  • Italian sausage – 1 lb, cut into pieces
  • Chestnut mushrooms – 1 cup, sliced
  • Red chili – 1 (medium)
  • Pine nuts – 1/4 cup
  • Pecorino cheese, freshly grated
  • Sea salt and freshly ground black pepper to taste

Directions:

  1. Boil water and cook pasta according to package directions.
  2. In a saucepan, heat olive oil over medium-high heat. Add in sliced onion and cook until tender. Then add in sausages and cook until browned.
  3. Add in mushroom, chili, pine nuts, and season with salt and pepper. Stir to combine and cook for about 3 minutes to bring out the flavor.
  4. Drain the cooked pasta and add into the sauce. Toss to coat pasta with sauce.
  5. Top each serving with grated pecorino. Serve immediately.

Ingredients:

  • Sweet or hot Italian sausage – 1 lb, sliced into 1-inch pieces

  • Spinach – 16 oz, washed and roughly chopped

Directions:

  1. Cook pasta according to package directions, drain.
  2. In a saucepan, sauté sausage until cooked. Remove from heat and place on a paper tower lined plate to absorb fat.
  3. In the same saucepan, heat the olive oil over medium-high heat. Add in garlic and sauté for about 1 minute. Then add spinach and sprinkle with salt and red pepper. Reduce heat to medium-low and simmer for about 5 minutes until steams are soft.
  4. Add cooked sausage into the sauce. Toss to mix.
  5. Remove sauce from heat. Add the cooked pasta and cheese into sauce and toss them together.
  6. Serve immediately with additional cheese on top.

Ingredients:

  • Smoked sausage – 1 lb, sliced into pieces
  • Cream of mushroom soup – 1 can
  • Fat free sour cream – 4 tbsp
  • Low fat Cheddar cheese, shredded – 2 cup
  • Red/yellow/green pepper - 1, cut into strips
  • Salt and ground pepper to taste
  • Penne pasta – 1 lb

Directions:

  1. Preheat oven to 350F.
  2. In a bowl, combine together mushroom soup, sour cream, and one cup of cheese. Mix well and set aside.
  3. Cook pasta according to package directions.
  4. In a Dutch oven, cook sausage over medium-high heat until browned.
  5. Add in cooked pasta, pepper strips, and the soup mixture. Toss to mix.
  6. Cover and place into the preheated oven. Cover and bake for 15 minutes to cook through.
  7. Add in the remaining cheese to the baked pasta. Cooked uncovered for another 15 minutes to melt down and brown cheese.
  8. Remove from oven and let stand for 5 minutes before serve.
