Easy Healthy Recipe #1: Parmesan Chicken Alfredo Pasta

Ingredients:

  • Rotini - 5 1/2 oz
  • Frozen mixed vegetables - 10 oz, 1 package
  • Frozen chicken breast-cooked and diced - 10 oz, 1 package
  • Low-fat chicken alfedo-style soup - 2 cup
  • Parmesan cheese-grated - 1/4 cup
  • Salt - 1/2 tsp
  • Freshly ground pepper - 1/4 tsp

Directions:

  1. Boil together pasta and vegetables in water until tender.
  2. Drain pasta and vegetables, place them in a bowl.
  3. Mix in cooked chicken, alfredo soup, grated cheese and salt. Stir well.
  4. Cook in Dutch oven over low heat for 3 minutes.
  5. Sprinkle the chicken alfredo pasta with freshly ground pepper.
  6. Serve hot.

Easy Healthy Recipe #2: Tomato Pesto Chicken Pasta

Ingredients:

  • Cooked farfalle pasta - 8 oz
  • Fresh asparagus - 2 cups
  • Chicken - 3 cups, cubed and cooked
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/3 cup, chopped
  • Sliced ripe olives - 1 can, drained
  • Pesto sauce - 3/4 cup
  • Romano cheese - 3 tbs, grated

Directions:

  1. Steam asparagus until tender crisp, drain well.
  2. In a large bowl, combine cooked asparagus and pasta.
  3. Mix in cooked chicken, cherry tomatoes, chopped onion, and olives. Stir well.
  4. Toss in pesto sauce to coat.
  5. Garnish with grated cheese. Serve.

Easy Healthy Recipe #3: Low Fat Creamy Spinach Chicken Pasta

Ingredients:

  • Spaghetti pasta - 3/4 pound
  • Olive oil - 1 tbs
  • Chicken breast fillets - 2, about 1 pound each
  • Large brown onion - 1, finely chopped
  • Garlic cloves - 2, minced
  • Cherry tomatoes - 1 cup
  • Carnation light and creamy evaporated milk - 1 can
  • Fresh thyme leaves - 2 tsp
  • Chopped fresh chives - 2 tsp
  • Baby spinach - 4 oz
  • Finely grated parmesan cheese - 1/2 cup
  • Pepper to taste

Directions:

  1. Follow the packet directions, cook pasta in boiling water until tender. Drain, place them in a bowl and set aside.
  2. In a frying pan, heat half of the olive oil over medium-high heat. Add in chicken fillet and cook for 5 minutes each side until chicken is browned.
  3. Transfer cooked chicken to a board. Thinly slice.
  4. In the frying pan, heat the remaining olive oil. Add in chopped onion and garlic. Stir for about 3 minutes or until garlic is softened.
  5. Mix in tomatoes and cook for another 2 minutes until tomatoes softened.
  6. Stir in evaporated milk, thyme, chives, and pepper to taste. Bring to boil.
  7. Combine chicken, spinach and milk mixture to pasta. Toss to combine.
  8. Top pasta with grated Parmesan. Serve warm.

Easy Healthy Recipe #4: Creamy Broccoli Chicken Pasta Bake

Ingredients:

  • Whole meal penne - 3/4 pound
  • Broccoli florets -3 cups
  • Leeks - 2, trimmed and sliced
  • Cooked chicken breast fillets - 1 pound
  • Low-fat milk - 2 cups
  • Corn flour - 1/4 cup
  • Grated mature cheese - 3/4 cup
  • Cherry tomatoes - 12, halved
  • Grated parmesan or pecorino cheese - 1/4 cup
  • Oregano - 1 tsp, dried
  • Whole meal breadcrumbs - 1/4 cup, dried
  • Pepper to taste

Directions:

  1. Preheat oven to 190.
  2. Boil pasta according to the packet instructions.
  3. For the last 5 minutes of boiling, add in broccoli florets and leeks.
  4. Cook till tender. Drain well and pour into a ovenproof dish. Reserve about 1 cup of the boiling water.
  5. Cut chicken into small chunks, add to the dish.
  6. In a jug, blend together corn flour and 1/2 cup of the milk to a paste.
  7. Add the remaining milk to the reserved water and heat to boil.
  8. Pour the paste into the milky water. Stir and simmer the mixture over low heat until thickens.
  9. Remove pan from heat. Mix in mature cheese and season to taste.
  10. Pour the sauce over pasta. Top with tomatoes, and sprinkle with parmesan, oregano and breadcrumbs.
  11. Bake in preheated oven for 20 minutes, or until crispy on top.
  12. Remove pasta from oven. Serve hot.

Easy Healthy Recipe #5: Garlic Mushroom Chicken Pasta

Ingredients:

  • Virgin olive oil - 1/4 cup extra
  • Basil - 2 tbs, dried
  • Cloves garlic - 3, minced
  • Oregano - 1tsp, dried
  • Powdered rosemary - 1 tsp
  • Chicken breast fillet - 1 pound, cut into small pieces
  • Mushrooms - 1/2 pound, chopped
  • Whole wheat spaghetti - 1 pound, cooked

Directions:

  1. In a sauce pan, heat olive oil. Stir in basil, minced garlic, oregano, and rosemary.
  2. Add in chicken pieces. Reduce heat to medium, stirring continuously.
  3. Cook until chicken started to turn brown. Add in chopped mushrooms.
  4. Stir for about 5 minutes until coated.
  5. Pour the chicken and mushroom mixture over cooked pasta.
  6. Serve hot.

Ingredients:

  • Rotini - 3/4 pound
  • Butter - 2 tbs
  • Skinless boneless chicken breast - 2, sliced

  • Cajun seasoning - 2 tbs or to taste
  • Freshly ground black pepper - 1 tsp

  • Red bell pepper - 1, julienned
  • Fresh mushrooms - 8 oz, quartered
  • Parmesan cheese - 1/2 cup, grated

Directions:

  1. Cook pasta according to package directions. Drain, set aside.
  2. In a skillet, melt butter. Add in chicken and stir for about 6 minutes until chicken browned.
  3. Add in minced garlic, onion, pepper, Cajun seasoning, bell pepper, and chopped mushroom. Stir to combine and cook for 5 minutes.
  4. Stir in cream and simmer for another 2 minutes.
  5. Add in Parmesan and stir to combine.

Easy Healthy Recipe #7: Grilled Chicken with Lemon Basil Penne Pasta

Ingredients:

  • Whole Chicken Breasts - 4
  • Penne Pasta - 1 pound, cooked
  • Butter - 1/2 sticks
  • Whole Lemons - 3, juiced
  • Cream - 3/4 cup
  • Grated parmesan cheese - 1 1/2 cups
  • Whole Basil Leaves - 20, Chopped
  • Salt and freshly ground black pepper to taste

Directions:

  1. Grill the marinated chicken. When cooked, slice and keep warm.
  2. Cook penne pasta according to the package directions. Drain and reserve 1 cup of the boiling water. Set pasta aside.
  3. In a pan, melt butter. Whisk in lemon juice, cream and half-and-half.
  4. When the mixture hot, add in cheese and cook until cheese melted.
  5. Add salt and pepper to taste. Add some reserved hot water if the sauce became too thick.
  6. Pour sauce over pasta in a bowl.
  7. Add in sliced chicken and sprinkle basil over the top.

Ingredients:

  • Farfalle (bow tie pasta), uncooked - 3 cups
  • Fresh orange juice - 1/3 cup
  • Fresh lemon juice - 1/4 cup
  • Extravirgin olive oil - 2 tbs
  • Stone-ground mustard - 1 tbs
  • Sugar - 2 tsp
  • Salt - 1 1/4 tsp

  • Cooked chicken breast - 2 cups, shredded(about 2 breasts)
  • Seedless red grapes - 1 1/2 cups, halved

  • coarsely chopped walnuts - 1/3 cup, toasted
  • Fresh chives - 3 tbs, chopped
  • Fresh parsley - 2 tbs, chopped

Directions:

  1. Boil pasta according to package directions. Drain and cool completely.
  2. In a large bowl, combine olive oil, orange juice, lemon juice, mustard, sugar, rice venegar, salt and pepper. Whisk to combine.
  3. Add in cooked pasta, chicken, grapes, celery, toasted walnuts, chopped onions, chives and parsley.

Easy Healthy Recipe #9: Spicy Tomato Chicken Pasta

Ingredients:

  • Salad pasta - 1/2 pound
  • Olive oil - 2 tbs
  • Chicken breast - 1 lb, cut into thin strips
  • Large onion - 1, cut into thin wedges
  • Broccoli florets - 3 cups
  • Soy sauce - 3 tbs
  • Sriracha (red chili sauce) - 1 tbs
  • Medium tomatoes - 3, wedged

Directions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a pan, heat olive oil. Add in chicken strips and cook until browned. Remove chicken from heat and set aside.
  3. Add onion into pan. Saute for about 2 minutes.

  5. Add in soy sauce, Sriracha, and pepper. Saute to mix well.
