Ingredients:

  • 2 skinless chicken breasts halves, cut into strips
  • 1 lemon, juiced
  • 1 pinch dried oregano
  • 1 tablespoon olive oil
  • salt to taste

Cooking Instructions:

  1. In a big bowl, place the chicken breast strips. Add 1/2 of the lemon juice and season with salt to taste. Evenly coat the chicken strips with sauce and set aside.
  2. In a skillet, heat oil over medium low heat. When oil is hot, add in the chicken stips. Saute the chicken for 3 to 5 minutes. Add in the remaining lemon juice and oregano, sauté for another 3 to 5 minutes, or until juices run clear.

Ingredients:

  • 2 chicken breasts halves, skin and fat removed

Ingredients:

  • 1 whole chicken
  • 3 lemons
  • 1 tablespoon honey
  • 4 teaspoons sherry
  • 2 tablespoons vegetable oil
  • 8 sprigs theme
  • 2 pounds small waxy potatoes, skin removed
  • 2 cups low-sodium chicken stock
  • 4 scallions, cut into short lengths
  • 1 red pepper, chopped

  1. Preheat oven to 375°F.
  2. Remove the zest from 1 lemon. For the remaining lemons, cut into slices.
  3. Take half of the lemon zest and mix with 1 tablespoon of vegetable oil. Season with salt and pepper, then rub all over the chicken.
  4. Once done, tie the chicken legs and tuck the wings under the chicken.
  5. In a roasting pan, arrange the waxy potatoes and lemon slices. Then, place the chicken with breast side down. Add the thyme sprigs.
  6. Roast the chicken in the preheated oven for 30 minutes. Spoon chicken stock over the top and basting with the pan juices in between.
  7. While chicken cooking, mix the remaining oil, honey, sherry, and lemon zest in a bowl. Stir and mix well.
  8. Remove chicken from oven. Add in scallions, red pepper, and the marinade. Seasons with salt and pepper. Return chicken to the oven and roast for another 40 minutes, or until chicken golden brown.

In Chinese cuisine, chicken is usually cut into pieces and fried before coated with a sweet and sour lemon-flavored sauce. Once chicken is fried, do remove the excess oil with a paper towel.

Ingredients:

  • 2 chicken breasts halves, cut into strips
  • 1/2 cup lemon juice
  • 1/2 cup corn starch
  • 1 teaspoon finely grated ginger
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 cup water or chicken stock
  • 1 tablespoon low-sodium soy sauce
  • 2 egg yolks
  • Chopped scallion
  • Cooking oil
  • Salt to taste

Cooking Instructions:

  1. For the sauce: In a saucepan, combine lemon juice, 2 tablespoons of cornstarch, ginger, honey, sugar, and 3/4 cup of water or chicken stock. Stir well.
  2. Heat the sauce over low heat. Cook until sugar melted and the sauce boil and thicken. Transfer to a bowl and set aside.
  3. For the chicken batter: In another bowl, combine egg yolk, soy sauce, and the remaining cornstarch and water (or chicken stock). Stir and mix well. Seasons with salt to taste.
  4. To cook the chicken: Heat up the cooking oil over high-heat. When the oil is hot, dip the chicken breast strips into the batter and fry until golden. Drain on paper towel.
  5. Transfer cooked chicken to a serving plate. Spoon sauce over chicken and sprinkle with chopped scallions. Serve hot.
