Easy Healthy Recipe #1: Low Fat Crock Pot Chicken

Ingredients:

  • White potatoes – 1 pound, halved
  • Baby carrots – 8 ounces
  • Onion - 1, sliced
  • Celery ribs - 2, sliced
  • Sliced mushrooms – 8 ounces
  • Skinless, boneless chicken breasts – 1 1/4 pounds, cut into pieces
  • Dried mixed herbs – 2 tsp
  • Crushed tomatoes – 1 can (14.5 ounces)
  • Fat-free, low-sodium chicken broth – 1/2 cup

Directions:

  1. Lightly coat the inside of a crock pot with non-stick cooking spray.
  2. Place the vegetables (potatoes, carrots, onion, celery ribs, and mushrooms) into the bottom of the crock pot.
  3. Sprinkle the vegetables with dried herbs. Then place chicken pieces on top of the vegetables, follow by canned tomatoes.
  4. Pour in the chicken broth, and cook on low for 6 to 8 hours, until vegetables are tender and chicken is cooked.

Serving size: 4

Ingredients:

  • Boneless skinless chicken breasts - 4
  • Barbecue sauce - 1 1/2 cups
  • Red onion - 1, diced

Directions:

  1. In a crock pot, place chicken breasts.
  2. Pour the barbecue sauce over the chicken, and sprinkle with diced onion.
  3. Cook on low for 6 to 8 hours or high for 4 to 6 hours.

Ingredients:

  • Carrots – 3 (medium), sliced
  • Red pepper – 1 (medium), chopped into 3/4-inch pieces
  • Skinless chicken thighs – 1 pound, trimmed off fat and cut in half
  • No-salt-added corn – 1 can (15 ounces), drained
  • Reduced-sodium kidney beans – 1 can (15 ounces), drained and rinsed
  • Low-sodium organic salsa – 1 jar (16 ounces)

Directions:

  1. In a 4-quart crock pot, add in carrots and red pepper pieces at the base.
  2. Place chicken thigh pieces on top.
  3. Then add in corns, kidney beans, and salsa.
  4. Cook on low for 6 to 8 hours.

Easy Healthy Recipe #4: Chicken and Dumpling in Crock Pot

Ingredients:

  • Boneless, skinless chicken thighs – 1 3/4 pounds, trimmed and cut into 1 1/2-inch pieces
  • Butter - 1 tablespoon
  • Large carrots - 2, cubed
  • Potato - 1, cubed
  • Celery - 2 stalks, diced
  • Large onion - 1, diced
  • Reduced-sodium chicken broth - 2 14-ounce cans
  • Salt and ground black pepper to taste
  • Water

For the Dumplings:

  • Whole-wheat pastry flour - 1 cup
  • All-purpose flour - 1/2 cup
  • Poultry seasoning - 1 teaspoon
  • Baking soda - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Nonfat buttermilk - 3/4 cup

Directions:

  1. In a crock pot, place the chicken, butter, carrots, potatoes, celery, onion and broth. Fill with enough water just to cover, and season with some salt and pepper to taste.
  2. Cover and cook on high for 5 to 6 hours.
  3. Meanwhile, prepare the dumplings. In a medium bowl, stir together whole-wheat flour, all-purpose flour, poultry seasoning, baking soda, salt and buttermilk.
  4. About 45 minutes before serving, drop the dough, 1 tablespoon at a time, over the simmering chicken stew in the crock pot. Cook until the dough is no longer raw in the center.
