Healthy Recipe #1: Quick and Easy Chicken Wraps

Ingredients:

  • Yogurt - 1/2 glass
  • Whole grain mustard - 1 tbs
  • Cooked chicken breast - 1 lb
  • A few leaves of lettuce
  • Medium cucumber - 1
  • Celery - 1
  • Corn - 2 to 3 tbs
  • Dry raisin - 1 to 2 tsp
  • Tortillas - 4
  • Salt and pepper to taste

Directions:

  1. In a bowl, mix together yogurt, mustard, and some salt and pepper.
  2. Chop cooked chicken into small pieces and stir into to the yogurt and mustard mixture. Toss until thoroughly coated.
  3. Wash lettuce, celery and cucumber. Chop lettuce to small pieces, and slice the celery and cucumber.
  4. Add the chopped lettuce, sliced celery and cucumber, corn, and dry raisins to the chicken mixture. Mix well.
  5. Divide the chicken mixture to add into tortillas shaped into cones or pockets.
  6. Your healthy chicken wraps are ready.

Healthy Recipe #2: Simple Filipino Chicken Adobo

Not only simple and healthy, this Filipino Chicken Adobo is inexpensive too!

Ingredients:

  • Chicken breasts - 4, skinless, boneless
  • Garlic cloves - 3, chopped
  • Vinegar - 1 cup
  • Bay leaves - 2 to 3
  • Water - 1 cup
  • Salt and pepper to taste
  • Soy sauce - 2 tbs
  • Finely chopped parsley - 1 tbs
  • A few basil leaves

Directions:

  1. Wash chicken breast and dry with paper towels. Then, cut the chicken breast into pieces.
  2. In a pot, place pieces of chicken breast, chopped garlic, vinegar, bay leaves and water.
  3. Bring the chicken mixture to boil. Then lower to medium heat, add in soy sauce and cook for another 20 minutes.
  4. When done, pour the chicken and the broth onto a dish. Sprinkle with chopped parsley and decorate with basil leaves on top. Serve.

Note: While waiting for the chicken adobo to cook, you may prepare for the rice and vegetables to be served together.
