Healthy Sponge Cake Recipe



How to make a healthy sponge cake?

Even though each of us has our own preferred version of sponge cake,  but the basic rule is to beat the mixture well to make it airy. There are many creative add-ons to a basic sponge cake, jam and cream filling are some of the common choices.

In this recipe, we will have a look on how to make a healthy sponge cake. Together with this basic healthy sponge cake recipe, there is an optional Victoria filling that you may consider to turns your normal sponge cake to a healthy Victoria sponge cake. The traditional Victoria sponge cake consists of jam and whipped double cream sandwiched between two sponge cake. We have improve the traditional recipe by using healthier substitution to reduce fat.


Easy Healthy Recipe: Sponge Cake

Serves: 4-6 slices

Preparation time: 30 minutes

Ingredients (Basic sponge cake):

  • Castor sugar - 1/2 cup
  • Plain flour - 3/4 cup
  • Vanilla extract - 1/2 teaspoon
  • Baking powder - 3/4 teaspoon
  • Egg - 3

Victoria filling for sponge cake:

  • Strawberries (sliced into half) - 20
  • Ricotta cheese - 5 tablespoons

Cooking Instructions

Basic sponge cake:

  1. Preheat oven to 350.
  2. Place flour and baking powder in a big bowl, stir well.
  3. Beat 3 egg using an electric mixer at high speed for about 1 minute till foamy. Mix in sugar and vanilla, and beat at low speed until the mixture is well blended.
  4. Gently fold in half of the flour mixture to the egg mixture. Then add in the remaining half of the flour mixture and again fold gently in order to retain the air in the mixture for the sponge.
  5. Place the mixture into a 7" x 7" lined cake tin.
  6. Bake in the preheated oven for 25 minutes. To check if the sponge cake is ready, you can lightly press on it with your finger and if it is bouncy, it is ready.
  7. Once cooked, remove the tin from oven, and left the sponge cake cools.

Victoria filling for sponge cake:

  1. Using a sharp knife, slice the cake horizontally into two halves.
  2. With a butter knife, spread the Ricotta cheese on one half of the cake, followed by placing the strawberry slices. Sandwich this with the other half.
  3. You may also apply the cheese and strawberry on the top layer, or just remain it as it is.
  4. Your healthy Victoria sponge cake is ready.
