Directions:

  • Heat milk and stir in oatmeal. Let sit for 15 minutes, so that oatmeal absorbs the liquid.
  • In a small bowl, beat eggs into stiff foam and reserve.
  • In a large bowl, combine all the remaining ingredients. Stir in oatmeal/milk mixture and fold in egg. Mix with a whisk until thoroughly mixed.
  • Heat a griddle or large pan over medium high heat. Oil the pan with either a tablespoon of butter (or cooking oil).
  • Pour 1/4 of the batter onto hot pan for one pancake. Cook until bubbles form on the surface. Flip when edges starts to dry. Cook pancake until golden browned both sides. Repeat for the remaining oatmeal pancakes.
