Easy Healthy Recipe #1: Moist German Chocolate Cake

Ingredients:

  • Whole wheat flour - 1 1/2 cups
  • Sifted carob powder - 3 tablespoons
  • Baking soda - 1 teaspoon
  • Sucanat - 1 cup
  • Sea salt - 1/2 teaspoon
  • Coconut oil - 5 tablespoons
  • Apple cider vinegar - 1 tablespoons
  • Vanilla - 1 tablespoons
  • Cold water - 1 cup

Chocolate cake frosting:

  • Coconut oil - 1/2 cup
  • Organic cane sugar - 3/4 cup
  • Shredded unsweetened coconut - 1 1/2 cups
  • Chopped pecans - 1 cup
  • Almond or rice milk - 1/2 cup
  • Vanilla - 1 teaspoon

Cooking Directions:

  1. In a mixing bowl, place flour, carob, baking soda, sugar and salt. Mix well.
  2. In another mixing bowl, place together coconut oil, vinegar, vanilla and water. Mix well.
  3. Slowly pour the wet mixture to the dry mixture. Mix them together until there aren’t any more lumps. Pour the mixture into a 9x9 inch baking pan.
  4. Preheat oven at 350°F. Bake for 30 minutes. Test with a fork. If a fork that insert to the center comes out clean, then the cake is done.
  5. To make frosting, in a saucepan, boil together all ingredients over medium high heat for 10 minutes. Continuously stirring with a wooden spoon until all mix well.
  6. While frosting is still warm, pour and spread on chocolate cake. Let set up for a few minutes (you can cover and place in fridge for faster set up). Serve.

Suggestions and Variations:

  • Can also be prepared in cup cakes. Reduce baking time accordingly.

Easy Healthy Recipe #2: Low Fat Chocolate Fudge Cake

Ingredients(The cake):

  • Dark chocolate - 2 cups
  • Eggs - 3, beaten
  • Light muscovado sugar - 1 cup
  • Vanilla pod - 1, cut in half lengthways and seeds scraped out
  • Clear honey - 2 tablespoons
  • Maple syrup - 2 tablespoons
  • Self-raising flour - 1/4 cup
  • Plain flour - 1/4 cup
  • Bicarbonate of soda - 1/4 teaspoon
  • Ground almonds - 1/4 cup
  • Cocoa powder - 1/4 cup
  • Salt - 1/4 teaspoon
  • Strong black coffee - 1/2 cup
  • Raw beetroot - 1 cup, peeled and finely grated
  • Sunflower oil - 4 tablespoons

Ingredients(The topping):

  • Good-quality dark chocolate - 1 cup
  • Strong black coffee - 3 tablespoons
  • Vanilla essence - 1 teaspoon
  • Clear honey - 3 tablespoons

Cooking Directions:

  1. Preheat oven to 320ºF. Lightly grease the surface of a high loose-bottomed cake tin with sunflower oil.
  2. Place dark chocolate in bowl. In a saucepan, gently melt the bowl of chocolate in some simmering water. Set aside.
  3. In a large mixing bowl, add eggs, vanilla seeds, sugar, maple syrup and honey. Using an electric hand whisk, whisk until mixture pale and fluffy.
  4. Fold in flour, bicarbonate of soda, almonds, cocoa, and salt into the mixture until fully incorporated. Then, using a spatula, continue with folding in cooled chocolate, coffee, beetroot, and remaining sunflower oil until thoroughly mixed together.
  5. Pour the mixture into the prepared tin. Bake in the preheated oven for 1 hour 30 minutes. Then cover the cake with foil and bake for another 30 minutes.
  6. Test the cake by inserting a fork into the centre. If it comes out clean, then the cake is done. Let cool on a wire rack.
  7. To make the fudge topping, use the same method in step 2 to melt chocolate. Then remove chocolate from heat and add coffee, vanilla essence and honey into the bowl. Mix to combine. Set aside for about 15 minutes, let it cool before icing the cake.
  8. Cut the cake through the middle and ice it in the centre and on all sides. Serve.

Easy Healthy Recipe #3: Simple Flourless Dark Chocolate Cake

Ingredients:

  • Dark chocolate - 6 oz
  • Almond butter - 3 oz
  • Butter - 3 oz
  • Eggs - 3, yolks and whites separated
  • Natural cane sugar - 6 tablespoons
  • Vanilla extract - 1 teaspoon

Cooking Directions:

  1. In a bowl, place chocolate, almond butter and butter. Melt the mixture over a double broiler.
  2. In the bowl of an electric mixer, place the egg yolks and 3 tablespoons of sugar. Beat until a light, pale yellow color mixture formed. Pour it into the bowl with melted chocolate mixture and mix until combine.

Ingredients:

  • Dark chocolate - 12 oz
  • Sugar - 1 cup
  • Unsalted butter - 3/4 cup
  • Pinch of sea salt
  • Eggs - 5

  • Ground almonds plus extra for dusting the tin - 1 tablespoon

  5. Allow to cool, and spread the surface with icing sugar.

Easy Healthy Recipe #5: Chocolate lava cake (Molten Chocolate Cake)

Ingredients:

  • Organic unsalted butter - 1 cup, cut into chunks
  • 85% cacao chocolate - 8 oz
  • Eggs - 5, beaten
  • Erythritol - 1 cup, powdered
  • Pure stevia extract - 1/2 teaspoon
  • Pinch of unrefined sea salt
  • Gluten-free flour (oat, buckwheat, etc.) - 4 teaspoons

Cooking Directions:

  1. Preheat oven to 450 ºF.
  2. In a bowl, place chocolate and butter. Allow them to melt in a saucepan over barely simmering water. Remove from heat when done.
  3. Add in eggs, erythritol, stevia extract and salt to the chocolate and butter mixture. Whisk to well combine. Then fold in flour until combine.
  4. Pour the batter into muffin cups and bake for about 14 minutes, until puffed up and still a bit moist looking on the tops.
  5. When done, let cakes sit in muffin pans for one minute, and then invert cakes on to individual serving dishes. Top with fresh whipped cream and berries, if desired. Serve immediately while warm.
