You may have a sandwich fill by mixing chopped boiled eggs with mayonnaise, and sprinkles with some pepper. Another delicious sandwich fill option may probably be frying the egg to like an omelet, and add in onions, cheese, green chilies, etc. You just need to have some creativity!

Easy Healthy Recipe #1: Healthy Bacon and Egg Sandwich

Ingredients:

  • Egg - 1
  • Skim milk - 1/2 tsp
  • Salt - 1/4 tsp
  • Pepper - 1/8 tsp
  • Canadian bacon - 1 slice
  • English muffin, split and toasted - 1
  • Low fat cheddar cheese, shredded - 1 tbs

Cooking Directions:

  1. Mix the eggs, milk, salt and pepper together, whisk well.
  2. Spray the non-stick cooking spray on 2 microwave safe custard cups.
  3. Pour the egg mixture into the prepared cups.
  4. Microwave on high the egg mixture for about 40 seconds, until the center of the eggs are almost set. Stir in between.
  5. Place the bacon on the English muffin pieces, and top with egg mixture.
  6. Now, sprinkle the cheese over the egg mixture.
  7. Place the sandwich on a microwave safe dish and microwave until the cheese has melted (about 10 seconds).
  8. Let the egg sandwich stand for about 1 minute before serving.

Easy Healthy Recipe #2: Simple Boiled Egg Sandwich

Ingredients:

  • Brown bread - 2 slices
  • Eggs - 2
  • Some freshly ground pepper
  • Salt to taste
  • Low fat mayonnaise - 1 tsp
  • Water
  • Green onion - 1

Cooking Directions:

  1. Boil the eggs in water over high heat.
  2. Once the egg cooked, throw away the hot water. Wait for the eggs to get slightly cooler and peel the eggs. Finish the step by rinsing the egg to make sure no more pieces of egg shell remains.
  3. In a bowl, mash the eggs by using a potato masher.
  4. Add in pepper and salt to taste, follow by mayonnaise. Mix the mixture well.
  5. Slice the green onion and mix along into the egg mixture.
  6. Spread the egg mixture evenly on one slice of the brown bread, and place another slice of the brown bread on top.
  7. Your sandwich is now ready.

Ingredients:

  • Hard-boiled eggs - 1
  • Scallion - 1
  • Dijon mustard - 1 tbs
  • Lettuce - 1 piece
  • Whole grain bread, toasted - 2 slices
  • Salt and pepper

Cooking Directions:

  1. In a bowl, mash the egg yolk together with mustard to form a thick paste.
  2. Chop the scallion and egg white. Stir into the paste.
  3. Add in salt and pepper to taste. Mix well.
  4. Spread the mixture evenly on top of one slice of bread.
  5. Top the mixture with lettuce leaves, and cover with the remaining slice of bread.

  • Whole grain bread, toasted - 2 slices
  • Garlic hummus - 1 tbsp
  • Hard-boiled eggs - 1

  2. Spread the mixture on top of one slice of the whole wheat bread.

Ingredients:

  • Olive oil - 1 tbs
  • Large fresh tomatoes, coarsely chopped - 5
  • Minced garlic - 1 tbs
  • Pita bread rounds- 4
  • Eggs- 6

Cooking Directions:

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add in chopped tomatoes and garlic, stir until the liquid is cooked out of the tomatoes.
  3. Break the eggs over the tomatoes. Add in salt.
  4. Reduce heat and simmer covered until fully cooked, it may takes about 20 minutes.
  5. Cut pita bread rounds in half, and spoon the mixture into the pita pockets.
  6. Serve.
