Easy Healthy Recipe #1: Healthy Chocolate Nut Bread

Ingredients:

  • All-purpose flour - 2 1/4 cups
  • Sugar - 2 cups
  • Baking powder - 1 1/2 tsp
  • Unsweetened cocoa powder - 3/4 cup
  • Salt - 1/2 tsp
  • Milk - 1 1/2 cups
  • Vegetable oil - 1 cup
  • Large eggs - 3
  • Vanilla extract - 1 tsp
  • Semisweet chocolate morsels - 2 cups
  • Chopped pecans - 1 1/2 cups

Cooking Directions:

  1. Preheat oven to 350.
  2. Grease a pan by using butter.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder and salt.
  4. Beat in milk, vegetable oil, eggs and vanilla extract. Blend well using an electronic mixer.
  5. Add in chocolate morsels and pecans. Stir well.
  6. Spoon the batter into the prepared pans and bake for about 1 hour, or until a knife inserted into the center of loaf comes out clean.
  7. Remove the chocolate bread from oven and set cool.

Ingredients:

  • Butter - 1/2 cup
  • Sugar - 1 cup
  • Eggs - 2
  • All-purpose flour - 1 1/2 cups
  • Baking cocoa - 1/2 cup
  • Salt - 1/2 tsp
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Buttermilk - 1 cup
  • Chopped pecans - 1/3 cup

Chocolate Honey Butter (Optional):

  • Butter(no substitutes) - 1/2 cup, softened
  • Honey - 2 tbs
  • Chocolate syrup - 2 tbs

Cooking Directions:

  1. Preheat oven to 350, and grease a loaf pan.
  2. Cream butter and sugar in a mixing bowl. Beat in eggs.
  3. Combine in flour, cocoa, baking powder, baking soda and salt.
  4. Gradually add in buttermilk, and fold in pecans.
  5. Pour the batter into the prepared pan.
  6. Bake for about 1 hour, or until a knife inserted near the center comes out clean.
  7. Cool for about 10 minutes.
  8. To prepare the chocolate honey butter, beat the butter until fluffy in a small mixing bowl. Add in honey and chocolate syrup, mix well.
  9. Serve chocolate honey butter together with the buttermilk chocolate bread.

Ingredients:

  • Squares unsweetened chocolate - 2(1 ounce)
  • Eggs - 3
  • White sugar - 2 cups
  • Vegetable oil - 1 cup

  • All-purpose flour - 2 cups
  • Baking soda - 1 tsp

Cooking Directions:

  1. Preheat oven to 350 degrees.
  2. Lightly grease a loaf pan with butter.

  4. Combine the melted chocolate with eggs, sugar, vegetable oil, grated zucchini, and vanilla extract. Beat well.

  • Buttermilk - 6-8 tbs

Cooking Directions:

  1. Preheat oven to 350. Lightly grease a loaf pan with butter.
  2. In a large mixing bowl, combine flour, cocoa powder, baking powder, baking soda, salt and spice.
  3. Beat in olive oil, apple sauce, sugar, buttermilk and vanilla extract. Blend well.

  3. Add in butter, sugar, vanilla extract, milk, and sour cream. Blend until the mixture is crumby.
  4. Fold in maraschino cherries and chocolate chips.
  5. Pour the batter into the prepared bread pan. You may top the batter with a few cherries.
